A Fresh Spring Time Salad
Made this lovely salad today for lunch....delish !
If you're like me I always welcome new and easy recipes to make as having to come up with new and exciting meals every day for the family to enjoy can lose it's appeal.
Lovely, light, simple - spring supper ...Enjoy !
Broad Bean,Asparagus and Jersey Royal Salad
250g New or Jersey royal potatoes
500ml veg stock
250g bunch of asparagus ( i use about 500g- i love asparagus )
300g broad beans
100g feta cheese or goats cheese
For the dressing:
15g butter
2tbsp extra virgin oil
1 bunch salad onions,sliced
1 tbsp balsamic vinegar
1/2 x 20g pack of mint,chopped
1. Wash & halve the potatoes and put into a large saucepan with the veg stock. Season lightly.Simmer, uncovered for 9-10 mins, then add the asparagus and broad beans.Cook for a further 3-4 mins or until the potatoes are tender,the veg are cooked and the stock has reduced away to a sticky glaze.
2. Mean while, make the dressing: heat the butter and oil together in a small saucepan, add the salad onions and cook over a medium heat for 1 minute. Remove from the heat,whisk in the vinegar and mint then season to taste.
3.Arrange the cooked veg in a large serving bowl,sprinkle the feta cheese and drizzle with the warm dressing to serve.
I like a nice slice of sourdough bread and a glass of rouge....perfect !!
