MamMa's banana cake ...yummy !!
Now I've been using this recipe for the last 5 years and it is always so tasty. It's for when you have those over ripe bananas in the fruit bowl and instead of throwing them away just mix them up to make a scrummy cake that everyone loves.....unless you hate bananas !!
175g plain flour
2 teaspoons of baking powder
1/2 teaspoon bicarbonate of soda
125g soft butter
150g caster sugar
2 large eggs
4 small , very ripe bananas
1 teaspoon vanilla extract
1. Preheat oven to 180c
2. Grease an 8cm deep loaf tin or I use those silicone rubber cake moulds.
In a bowl, mix together the flour, baking powder and bicarb .
3.In a separate bowl, mix the butter and sugar, I use an electric hand whisk as it's a lot quicker and easier.
Then beat in the eggs one at a time, then add the bananas and vanilla extract. Gradually add the flour mixture stirring well.
4. Pour into your cake tin and place in the centre of the oven for 50-60mins,or until a skewer inserted into the cake comes out clean.
