Fish stew 

This is such an easy dish to cook up and is really delish when cold and miserable outside, my kids love it ! 



You will need :
1 onion - peeled and chopped
1 leek- finely chopped
2 courgettes
1kg potatoes- peeled and cubed
1 glass of white wine
1 pint of milk
1 pint of fish stock ( or chicken stock)
1 kg of cod fillet, skinned and boned
1 handful of parsley
1 bunch of spring onions finely sliced 
Juice of 1/2 a lemon 

1. Fry the onion and leek together in some oil for about 5 mins or till soft and tender
2. Grate the 2 courgettes in to the pan then add the chopped potatoes and give it all a stir.
3.Turn the heat up and add the white wine and allow to cook down by half before adding the milk and stock. Bring to the boil and simmer for 30 minutes.
4. Now add the cod and simmer for 15 mins- feel free to stir and break up the fish, but it's quite nice to leave some big chunks as well. Season to taste.
5. Mix in a separate bowl the parsley, spring onions, juice of 1/2 lemon and a gulp of olive oil . 
6.Divide the stew up between your bowls and add a handful of the parsley dressing and enjoy .
